Recipe 2: Egg Sandwiches
For one person
- Two eggs
- Two slices of bread (white or brown, either works)
- Six slices of cheese
- One slice of ham
- One jalapeƱo pepper, sliced thinly
- 1 tablespoon frozen corn
- 1 tablespoon of fresh or frozen bell pepper
- Onion, if you like
- Salt, pepper
- Olive oil for frying
- Large frying pan
- Cup
- Whisk to whip the eggs
- Cutting board
Begin by laying out all your ingredients.
Cut 6 slices of cheese. Set aside.
Get one slice of ham. Set aside.
Cut the bell pepper so you have about 1 tablespoon full
Get one tablespoon full of frozen corn from the freezer. Set aside.
Get two slices of bread either from the freezer or the middle drawer.
Heat the large frying pan carefully over low heat. Add the olive oil to the frying pan. Continue to heat over low heat.
Break the eggs into a cup, add a little salt & pepper to taste and whisk until the egg is all mixed up and you don't see separate strands of white and yellow.
Make sure the oil spreads to the whole bottom of the pan. Pour the whipped egg into the pan abd immediately put two slices of bread on top of it, a little bit apart.
Let the egg continue to cook. Meanwhile, on one of the slices of bread put 2 slice of cheese. Top that with the ham. Then add your veggies (bell pepper, corn, jalapeno slices, onion, if you like onion) on top of the ham and cover with the rest of the cheese.
The egg should now be cooked enough that you can carefully flip the plain slice of bread on top of the bread with the ham, cheese and veg.
Continue to cook until the cheese is all melted and sticking the slices together. Carefully flip over the sandwich to make sure it's cooked evenly on each side.
When you're happy with how it's cooked, turn off the burner and carefully slide your sandwich into a plate. You can fold the egg underneath if you like so it looks nicer, but it's not necessary to do that .
