Recipe 1: Tuna Mac
- 1 2 lbs box of elbow macaroni
- 1 can of sweet corn
- 2 cans of tuna
- 1 tablespoon of finely minced onion
- 1 cup of mayonnaise
- 1/2 cup of sweet relish
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- Salt, pepper
- Large pot
- Large stainless steel bowl
- Large colander
- Measuring cups and spoons
- Cutting board
- Knife
Soak the macaroni overnight to soften it (I'll do that this time. It saves boiling the pasta and making the house hot and sticky). When you're ready to cook, test one piece of macaroni to see if it's soft enough.
Begin by getting together all you need. We already have cooked macaroni, but we need corn and tuna and condiments (sauces and other things that give flavor).
Wipe off the tops of the three cans, then open them using the electric can opener.
Dump the corn into the colander and give it a quick rinse, then put it in the large bowl.
Dump the tuna in the colander so the water drains out. Save a half teaspoon of tuna for both cats, they love it. Then add the tuna to the corn in the bowl, breaking up any large clumps.
Cut a small piece from an onion and cut that into very small pieces. I know not everyone is a fan, but it's a great way to flavor food and 1 tablespoon of minced onion in all the rest of the food won't even be noticeable, except by its absence
Measure the mayonnaise and add that to the bowl of corn and tuna. Do the same with the relish and lemon juice. Mix up all these things.
Now add the macaroni. To make sure everything is well mixed , it's probably easiest if you mix the macaroni into the sauce a little at the time.
When everything is mixed well, cover the bowl and put it in the fridge until it's time to eat. Then serve with cheese and Sriracha.
